- 1/2 cup (packed) SILKEN firm tofu
- 1 tbsp Vegenaise or Nayonaise
- 2 tbsp olive oil
- 2 tbsp freshly squeezed lemon juice
- 1 tbsp apple cider vinegar
- 1 tbsp mild miso (ex: Genmai brown rice miso)
- 1 x medium clove garlic, halved
- 1 tsp Dijon mustard
- 1 tsp capers
- 3/4 tsp vegan Worcestershire sauce
- 1/4 tsp sea salt
- Freshly ground black pepper to taste
- 1/4 tsp agave nectar
- 2 tbsp nutritional yeast
- With a hand blender or in a blender or a food processor, combine all ingredients (starting with 2 tbsp oil) and purée until very smooth, scraping down sides of bowl as needed.
- Add additional oil and agave nectar to taste.
- Note; If you love nutritional yeast, go ahead and add it into this dressing. It will give just a slight cheesy flavor that is enjoyable, though it is certainly not essential to make this dressing delicious.
- Note: This dressing is fairly dense, and will thicken after refrigeration. Thin as desired before serving by stirring in 3-4 tsp plain soy milk.
